1 cucumber, peeled, seeded and diced into ¼-inch pieces
1 sm. red pepper, diced into ¼-inch pieces
3 plum tomatoes, diced into ¼-inch pieces
1 sm. red onion, diced into ¼-inch pieces
3 T. fresh mint leaves, chopped
3 T. fresh Italian parsley, chopped
2 T. olive oil
2 T. fresh lemon juice
1 T. balsamic vinegar

In a large bowl, stir together all ingredients and season with
salt and pepper. Arrange onto serving plates; garnish as desired.
