TOFU SPINACH LASAGNA

  • olive oil
  • 3 cloves garlic, minced
  • 1 package (10 oz.) frozen spinach, thawed; drained
  • 2 cans (6 oz.) tomato paste
  • 1 TB fresh basil, chopped or 1 tsp. dried
  • 1 TB fresh oregano, chopped or 1 tsp. dried
  • 1 block (20 oz.) firm tofu, mashed to resemble cottage cheese
  • 16 oz. Mozzarella cheese, grated
  • 8 oz. lasagna pasta, cooked according to package directions.
  • Preheat oven to 350 degrees; lightly grease a 9-inch baking dish. In a large skillet over medium high heat, sauté garlic in olive oil, until translucent. Add spinach, tomato paste, basil and oregano. Add mashed tofu and blend well. Season to taste. Layer pasta in prepared baking dish, spread spinach mixture evenly, top with cheese and repeat layers, finishing with cheese. Bake covered for 45 minutes. Let sit for 15 minutes. Serves 6.
